The restaurant sits somewhere between a French bistro and a modern Hungarian kitchen, where the focus is on natural flavors and elegant simplicity. With a Michelin star to its name, Borkonyha builds its ever-changing menu on top-quality ingredients, ideally sourced fresh each day, and updates its dishes weekly or biweekly. It’s hard to define Head Chef Ákos Sárközi’s style in a single word — and perhaps there’s no need to. Visual presentation is just as important to him as flavor. His inspiration often stems from family recipes and Transylvanian roots, but he’s just as comfortable working with ingredients from French or Italian cuisines. The kitchen philosophy is rooted in freedom and invention, always with a deep respect for culinary tradition. Dishes like Mangalica pork with handmade dumplings or pumpkin soup with camembert reflect this spirit — refined and original, but never flashy for its own sake. Borkonyha’s success isn’t the work of one person alone. Sous chef Csaba Puskás has been with the restaurant since its opening, now playing a key role in shaping the menu. The kitchen’s energy comes from genuine friendships — something diners can sense. The wine list features 200 mostly Hungarian bottles, with 48 available by the glass, offering a rare chance to taste and explore before committing to a full bottle.
