He is a trained chef from Falsled Kro here on Funen, and his background in French cuisine combined with his Vietnamese roots shapes the dishes you will be served at Restaurant Bryggen. Phong grew up in Assens, and with his great passion for food and a dream of creating something unique in his hometown, Restaurant Bryggen was born. In addition to Restaurant Bryggen, Phong Thanh also owns Me - Mothers Streetfood in Odense, Aiko Sushi in Nyborg, and Phi Phi in Kerteminde. The former won first place in the “Best Value” category at Best of Odense in 2020.
